Kolhapur is famous for its non-vegetarian cuisine and famous Tambda Rassa which is a red curry lamb gravy and Pandra Rassa which is a white gravy prepared with coconut milk. Today I am going to cook Tambda Rassa that tastes amazingly delicious and spicy. It is not just a dish but an experience which everybody should experience for once at least. So let's get started with this awesome dish of Kolhapur.

Ingredients:
Mutton Stock
500 grams of goat meat, a half teaspoon of salt, a half teaspoon of turmeric, 2-3 tablespoons of ginger-garlic paste, a small-sized onion, 2 tablespoons of oil, 50 grams of goat fat.

Masala Paste
1.5 tablespoon of grated coconut, 1 tablespoon of poppy seeds, 2 bay leaves, 1 petal of star anise,
1 teaspoon of cumin seeds, 10-15 peppercorns, 5-6 cloves, a small piece of cinnamon, 1 black cardamom, 1 teaspoon of white sesame seeds, oil to fry spices

Onion paste
2 big sized onions, 5 cashew nuts, a small piece of ginger, 8-10 cloves of garlic, approx 50 grams of coriander leaves, oil to fry onion, cashew nuts, ginger, and garlic.

Tambda Rassa
above masala paste, onion paste, 3-4 tablespoons of oil, 1 tablespoon of red chili powder, 1.5 tablespoons of Kanda Lasun Masala, salt as per taste, a medium-sized tomato.
