Hi everyone, today I’m going to show you how to make kolokotes. These are Cypriot pumpkin pies, a cross between a savoury and sweet snack.
This is one of those recipes that makes me think of my yiayia. She would make them every October when pumpkins appeared in the supermarket.
She used to dice her pumpkin, I picked up the grating tip from Stavros Kitchen here on YouTube. And I find it so much easier.
The smells and ingredients to me scream autumn. And if you want to make them outside of pumpkin season, you can use butternut squash.

Makes 12 or so
Ingredients:
Filling -
650-700g or 5 cups grated pumpkin (you can use butternut squash also)
160g or 1 cup sultanas
90g or 1/2 cup coarse bulgur wheat
80ml or 1/3 cup olive oil
2 tsp brown sugar & cinnamon
1 tsp salt & pepper

Pastry -
500g or 3.5 cups plain flour
100ml or just less than 1/2 cup olive oil
250ml or 1 cup orange juice
1 tsp salt
