New Sweet Potato Bread - Much softer

Gluten and Lactose Free

Ingredients
100g of rice flour
50g of oat bran
70g of sweet flour
40g of corn starch
30g sugar (I used yellow)
7g of organic yeast
5g xanthan gum
6g of chemical yeast
½ teaspoon of salt
2 eggs
90ml of water
30ml of olive oil
200g boiled and mashed sweet potato
1 egg beaten with 1 tablespoon of water for garnish

Ingredients and Preparation:
Reserve 200g of boiled sweet potato (dried) and mashed (mashed)

In a bowl add:
100g of rice flour
50g of oat bran
70g of sweet flour
40g of corn starch
30g sugar (I used yellow)
7g of organic yeast
5g xanthan gum
6g of chemical yeast
½ teaspoon of salt

Mix well and take to the mixer or continue by hand.
add 2 eggs
Slowly warm water - I used 90 ml
200g of boiled and mashed sweet potato.
30ml of oil.

Attention to the dough point: firm and creamy texture.

Transfer to a greased and floured shape with rice flour.
Model with the help of a wet tablespoon
Brush 1 beaten egg with 1 tsp of water
Let rise for 30 minutes
brush again
Bake at 200°C for 30 - 40 minutes

Let cool and serve.
