Today I am going to use vegetable oil instead of lard to make a pastry mooncake with pork filling. With distinct and crispy layers, this Chinese moon cake is very tasty, flaky and healthy. NO oven is needed.
🍞INGREDIENTS
☘️Filling(can make 16pcs)
Pork mince with fat 250g
Soy sauce 2tbsp
Dark soy sauce 1tsp (use ½ tsp for lighter color)
Cooking wine 1tbsp
Oyster sauce 1tbsp
Sesame oil 1tsp
White sugar ½ tsp
Ground white pepper ¼ tsp
Preserved vegetable (finely chopped) 30g
Spring onion 1 stalk (finely chopped)
Potato starch 1tbsp
Salt 1g
Vegetable oil
☘️Pastry Dough (makes 16pcs )
Water-oiled dough
Plain flour 180g
Caster sugar 20g
Vegetable oil 45g
Cold water 90±g
Salt 1g
Shortcrust pastry dough
Plain flour 160g
Vegetable oil 65g
☘️Can be fried or baked
Fry :Add oil in a frying pan,fry over medium or medium-how heat until both sides become light golden brown. Turn over all the time.
Oven :Bake in a preheated oven at 180C/360F for 25-30 mins

生抽 2汤匙
老抽 1茶匙(如不喜欢深色,用½ 茶匙)
料酒 1汤匙
蚝油 1汤匙
芝麻香油 1茶匙
白糖 ½ 茶匙
白胡椒粉 ¼ 茶匙
榨菜末 30克
葱 1颗 (切成葱末)
淀粉 1汤匙
盐 1克
植物油 少许
☘️酥皮面团 (共可制作16个鲜肉月饼)
油皮
中筋面粉 180克
细砂糖 20克
植物油45克
凉水 90±克(根据面粉吸水性增减)
盐 1克
油酥
中筋面粉 160克
植物油65克
☘️可煎也可烤
煎制:倒入少量油, 中火或中小火煎至两面淡金黄色,期间不断翻面受热均匀
烤箱:放入预热好的烤箱内180C/360F烤制25-30分钟
