It is restaurant quality without the hassle of going out and it is super simple to make too. Perfect date night dinner or when you have company. Just make it!! Love you Stephane!! Preheat oven to 350°.
Season the pork loin slices with salt and pepper. In a large saute pan melt 1 tablespoon butter and 1 tablespoon canola oil. Place the pork in the pan and cook on each side for 5 minutes. More if needed. Remove from the saute pan and place in a baking dish, and cover with foil. Place in the oven to keep warm. Best to keep warm for an hour or two.
Deglaze the pan with 150ml of cider. Add 100ml of cream. Once thickened add 1/4 teaspoon salt and 1/8 teaspoon pepper. Lastly add 2 teaspoons calvados or apple brandy. And there you have the sauce.
Peel and scale thinly apple. Toss in some lemon juice. In a saute pan melt 1 tablespoon butter. Add the apple and saute until tender. Add 1/4 teaspoon salt and 1/8 teaspoon pepper.
Right before serving add the pork loin back into the sauce and add the apples too. Warm everything up and serve.
