hello everyone! today we are making pineapple buns with custard filling! the custard is buttery and soft (奶酥 in chinese) i'm not exactly sure how to translate it haha. the bread is super soft/chewy, and the bread topping is buttery and crumbly. the summer weather is really helping to activate the yeast, best time of the year to make bread!!

INGREDIENTS / 材料:
water roux 湯種:
- 125mL water 水
- 25g bread flour / 25克高筋面粉
bread dough 主麵團:
- 275g bread flour / 275克高筋面粉
- 1/2 tsp salt / 半茶匙鹽
- 72mL milk 牛奶
- 1/2 egg / 半顆蛋
- 1 1/2 tsp instant yeast / 1 1/2茶匙酵母
- 40g sugar / 40克糖
- 25g unsalted butter (softened) / 25克奶油
pineapple topping / 菠蘿皮:
- 1/2 egg / 半顆蛋
- 75g unsalted butter (melted) / 75克奶油
- 50g powdered sugar / 50克糖粉
- 144g bread flour / 144克高筋面粉
- 1/2 tsp baking powder / 半茶匙小蘇打
custard filling / 奶酥餡:
- 45g unsalted butter (softened) / 45克奶油
- 26g powdered sugar / 26克糖粉
- 1 egg / 1顆蛋
- 50g milk powder / 50克奶粉
