Red beans with smoked ham hocks and sausage

2lbs red beans
2lbs smoked sausage from Lejuenes in Eunice Louisiana
3lbs Deboned smoked ham hocks
3-4 beef bone broth from Zoups
2-4 cups chops celery
2 large chopped white onions
1 Large green bell pepper or substitute 3 poblano peppers
Chopped garlic. 2 tablespoons
Soak beans 24 hours. Wash them after
Add stock to beans. Bring to a boil and then reduce to a simmer
Brown meat in oven at 425 for 30 minutes. Remove and put into beans. Save residual oil
Brown veggies in left over oil. Add some butter if needed. Once browned remove from pan and add to beans.
Cover pot and cook for 4 hours stirring occasionally
