Oven-baked pork neck, what's better than with mushrooms and red wine. My adaptation of a classic pork roll with mushrooms. The recipe is easy, practical and very tasty. Suitable for Christmas and New Year menu.
Ingredients:
for about 6 servings
1.2-1.3kg pork neck (I use chilled)
1 tsp salt
1 tsp pepper
1 tsp garlic powder (maybe 1 clove fresh or not)
100 g of smoked bacon
For the stuffing:
1 large onion
500 g of porcini mushrooms (if you have brown ones, even better)
3 cloves of garlic
7-8 small sprigs of thyme (or 1 tsp dried)
3 tbsp. olive oil
1/4 tsp. pepper
1/4 tsp. salt or to taste
For the sauce
100 ml of red wine
1 tsp flour (can starch)
For the glaze sauce
1 tsp honey
1 tsp smoked red pepper
1 1/2 tbsp. soy sauce
2 tbsp. olive oil
After cutting the meat, pound it a little and lightly. Roll up and prepare everything, put in an oven heated to 220 degrees for 20 minutes to set and roast, so the juices will remain inside the meat. Remove from the oven and brush with 1/2 of the glaze. Wrap well with foil and bake for 1 hour and 40 minutes at 160 degrees. Remove the foil, spread with the remaining sauce and bake at 200 degrees for 20 minutes, watch it so it doesn't burn. The meat was actually roasted for a total of 2 hours and 20 minutes. Let rest and serve.
