🍳 INGREDIENTS 🍳
FOR THE COOKIE Dough
egg whites 140 g
yolks 90 g
flour 00 125 g
granulated sugar 125 g + 1 tablespoon for sprinkling the roll
lemon: the grated rind of 1
vanilla 1 pod (or 1 teaspoon of natural extract)
salt 1 pinch
FOR THE FILLING
liquid fresh cream 300 g
mascarpone 300 g
icing sugar 130 g
mixed berries to taste 125 g
strawberries 125 g
🍳 PREPARATION 🍳
00:00 - Separate the yolks from the whites and, in a large bowl, whip the latter until stiff with an electric mixer until they become light and frothy; combine sugar.
02:14 - Now the yolks, one at a time; mix the mixture well and add the grated lemon zest and the vanilla.
02:56 - Now add the sifted flour and salt by hand; amalgamate until you get a smooth compound without lumps.
03:57 - Pour the mixture into a baking tray lined with parchment paper, level the surface with an angled spatula, to make it uniform and even. Cook the biscuit dough in a preheated static oven at 200° for 10 minutes.
04:56 - Once it's ready, transfer it to a work surface, sprinkle it with granulated sugar, seal it with plastic wrap to prevent it from drying out and cracking while rolling, then let it cool completely.
05:38 - Place the mascarpone and fresh liquid cream very cold from the refrigerator in a bowl, add the icing sugar and whisk with an electric mixer until you obtain a consistent mixture.
07:16 - Spread the cream mixture all over the roll except 200g which you will keep for decoration, then top it with the berries keeping some aside for decoration.
08:30 - Roll up the cake starting from one of the short sides using the parchment paper. Once rolled up, wrap the cake in parchment paper and then in transparent film so that it is firmly in place. Now put it in the refrigerator and keep it like this for at least a couple of hours (preferably overnight).
09:21 - Place the roll on the serving plate. Transfer the reserved cream mixture to a piping bag and use it to decorate the roll. Finally, also place the fruit set aside. Your roll with cream and berries is ready!
