🔺 Ingredients for the sponge cake:
5 eggs (whites and yolks separated)
1/3 tsp salt
80 g sugar (for egg whites)
40 g sugar (for egg yolks)
1 tsp vanilla sugar
100 g flour
1/2 tsp baking powder
40 g milk
50 g vegetable oil
🔺 Ingredients for the cream:
250 g mascarpone
80 g powdered sugar
250 g cream (33% fat)
🔺 Additional:
70 ml coffee (sweetened to taste)
20 g dark chocolate
Cocoa powder for dusting
💡 Tip: This roll should rest in the refrigerator for at least 2 hours to allow all the flavors to meld perfectly and the cream to set nicely.
