Forget fancy Michelin-star dishes! This humble street food from Singapore took down the one and only Gordon Ramsay in a cook-off some years ago! Yep, you heard that right. Katong Laksa, a creamy, coconutty, spicy noodle soup, reigned supreme.
Laksa comes in tons of varieties across Southeast Asia, but this one is special. Think crazy umami flavors, a rich coconut curry broth, and a balanced topping texture of QQ-textured noodles, sweet shrimp, and bean sprouts. Plus, this recipe is inspired by the version made by the family that WHOOPED Ramsay! (Shoutout to my friend Ryan and his mom Nancy of 328 Katong Laksa)

SOUP STOCK :
• 60g Dried Shrimp (soaked in hot water for 30 mins, pounded or blended) https://amzn.to/3U5t4I6
• 500g Raw Shrimp with Heads (if it doesn't come with heads and shells, you can just buy the shrimp as is and substitute with chicken stock as the dried shrimp's flavors will be umami enough for the broth)
• Shrimp Heads (if you have them)

REMPAH PASTE FOR LAKSA BASE (makes around 150g):
• 150g Shallots
• 5 Cloves Garlic
• 100g Fresno Red Chilli
• 35g Dried Chili (Refreshed and deseeded to lower the spice level) https://amzn.to/4eWQ2ta
• 5 Raw Macadamia Nuts https://amzn.to/4eyZJhA
• 25g Galangal
• 25g Fresh Turmeric / 1 Tsp Turmeric powder https://amzn.to/3TZtn7h
• 2 Stalks Lemongrass (Use the white core at the bottom )
• 10g Belacan https://amzn.to/3BCNpyr (or you can use Thai shrimp paste if you already have them in your pantry, but keep the windows open to avoid overwhelming your home with that nice "funk")
• 1 tsp Salt
• 1 tsp Sugar
• 60g Oil to Fry the Rempah

FINAL LAKSA BROTH:
• 150g Rempah you just made

• 50g Fish Sauce (There are many choices, but below are the ones in my kitchen)
