For the kibbeh filling you will need:
3 tablespoons vegetable oil
2-3 onions diced finely
2 lb ground beef or lamb
2 teaspoons salt (to taste)
1 Tablespoon dried mint
2 teaspoons black pepper
2 teaspoons allspice (or 7-spice)
3 Tablespoons pomegranate molasses (special ingredient)
1/4 cup (4 Tablespoons) extra version olive oil
1/2 teaspoon cardamom
1 teaspoon spicy pepper flakes
*up to 1 cup pine nuts, toasted
*up to *1 cup chopped walnuts, raw
You will need:
1 kilo (1000 grams) fine bulgur, dark or light but it must be the fine variety
1 small onion
1.5 lb (24 oz) thin, lean beef
1 teaspoons Aleppo pepper or Korean gochujang pepper
1 Tablespoon cumin
Salt (start with a Tablespoon)
Pepper (start with 2 teaspoons)
Possibly more water up to 1 cup
