Have you ever heard Tefutanmen?

It is an original dish of a Chinese restaurant named Azumaya in Asaka City, Saitama Prefecture.
Red soup is spicy enough to make you sweat.
But it is mildly spicy because it is mixed with beaten egg.

Tefutanmen(for 1 serving)
1 serving ramen noodles
400 ml (13.3 oz) chicken bone and Tonkotsu soup
30 g (1 oz) pork
50 g (1.7 oz) Chinese cabgage
50 g (1.7 oz) cabbate
10 g (0.3 oz) wood ear mushroom
30 g (1 oz) bean sprout
15 g (0.5 oz) carrot
20 g (0.7 oz) Chinese chives
30 g (1 oz) onion
1 seving seasoning
1 tbsp grated garlic
1 tbsp Gochjiang
1 egg
some green onion

Chicken bone and Tonkotgu soup(1600cc)
3 pork femurs
1 chicken bone
4000 ml (4.3 qt) water

Seasoning(1 erving)
1 tsp Korean red chili pepper
1 tsp soy sauce
1 tsp sesame oil
1 tsp salt

Ramen noodles(for 4 servings)
120 g (4 oz) cake flour.
220 g (7.3 oz) bread flour.
130 ml (4.3 oz) coloered water
4 g (0.13 oz) salt
4 g (0.13 oz)baking soda

 合わせ調味料:1人分
 すりおろしにんにく:大さじ1
 コチュジャン:大さじ1
 玉子:1個
 青ネギ:少々

鶏ガラ豚骨スープ(1600cc)
 拳骨:3本
 鶏ガラ:1つ
 水:4000㏄

合わせ調味料(1人分)
 韓国唐辛子:小さじ1
 醤油:小さじ1
 ごま油:小さじ1
 塩:小さじ1

中華麺(4人分)
 薄力粉:120g
 強力粉:220g
 クチナシ水:130㏄
 塩:4g
 重曹:4g
