For the Casserole Base:
6 large eggs
1 cup large curd cottage cheese (blended smooth, no need to strain)
1/2 cup heavy cream
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup crumbled cooked bacon or sausage (optional)
1 cup diced veggies (combined: bell peppers, onions, spinach, or mushrooms)
1/4 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
For the Topping:
1/4 cup shredded cheddar cheese
2 tbsp grated Parmesan cheese
2 tbsp almond flour (optional, for a crispy topping)
1 tbsp melted butter (optional)
Instructions
1️⃣ Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish.
2️⃣ Blend the cottage cheese until smooth.
3️⃣ In a bowl, whisk together eggs, blended cottage cheese, heavy cream, garlic powder, onion powder, smoked paprika, salt, and pepper.
4️⃣ Stir in cheddar cheese, mozzarella, cooked bacon or sausage, veggies, and Parmesan cheese.
5️⃣ Pour the mixture into the greased dish.
6️⃣ Mix topping ingredients and sprinkle over the casserole.
7️⃣ Bake for 30–35 minutes or until the center is just set. If the center still moves, bake an extra 5–10 minutes and cover the top with foil if needed.
