A day of vegan comfort food. I’ve been in the mood for cozy fall meals, so today I enjoyed a delicious biscuit sandwich with tempeh sausage and tofu egg from one of my favorite vegan restaurants. Lunch: Gochujang Chickpea Sandwich (4 servings)
Chickpeas
Soft Bread
Butter Lettuce or Slaw Mix
1 Tbsp Gochujang Paste
1/2 cup Yogurt or Vegan Mayo
1 Tbsp Agave
1 tsp Soy Sauce
1 tsp Garlic Powder
Cilantro
Green Onion

Dinner: Red Thai Curry Dumpling Soup (2 servings)
2-3 Tbsp. Red Thai Curry Paste
2 Tbsp. Avocado Oil
2 Cloves Garlic (minced)
2 Tsp Ginger (grated)
1 Tbsp Soy Sauce
1 tsp Agave
1/2 cup Veggie Broth
1/2 cup Water?
1 Can Coconut Milk
8 Frozen Dumplings
1 Cup Edamame
Red Bell Peppers (sliced)
Bok Choy
Cilantro & Green Onion
Chili Oil
Lime

Heat the avocado oil in a saucepan on medium heat.
Add the red peppers, garlic, and ginger and saute for about 1 minute.
Add the red curry paste to the pan and continue to saute for 1 more minute.
Add the coconut milk, veggie broth, water, agave, and soy sauce. Stir and simmer until the soup starts to thicken (about 5 minutes).
Add the dumplings and edamame and continue to simmer for an additional 5-7 minutes to cook the dumplings and beans.
Add the bok choy during the last minute of cooking.
Split the soup and dumplings between two bowls and top with cilantro, green onion, chili oil, and lime as desired.
