I am in love with my native Ukrainian cuisine and I want to share with you all the new forgotten recipes. One dish I want to resurrect is vereshchaka. Fragrant pork ribs baked in kvass with spices and garlic. Beet kvass has traditionally been used for cooking, but I decided why not try making it with dark bread kvass, which can be bought today in any store. And you know, I wasn't wrong - this option turned out no worse. I am sure that having tried vereshchak, you will literally taste Ukraine. This is something incredible!

Vereshchaka recipe
Portions: 6-8
Preparation time: 20 minutes
Cooking time: 1 hour

How to cook vereshchak
0.8-1.0 kg of pork ribs
1 head of garlic
2-3 tbsp. l. sunflower oil
0.75-1 l of bread kvass (dark)
1 tsp. oregano / oregano
2 st. l. flour
50 g of butter
1 st. l. breadcrumbs
2-3 sprigs of parsley
salt and pepper to taste

How to cook pork ribs baked in kvass
Pork ribs (0.8 - 1 kg) cut into 1-2 segments, salt and pepper. Using a press, squeeze the cloves of garlic.
Fry the pork in a pan with a little sunflower oil (2-3 tbsp. L.) until ruddy crust.
Transfer the ribs to a deep baking dish and add 1 tsp. oregano (or oregano). Pour into a mold with ribs 0.75 - 1 liter of dark kvass.
Bake pork with kvass in an oven at 180 degrees for 1 hour.
Transfer the finished ribs to a container and cover with foil to keep them hot until served. Pour the kvass into a saucepan and evaporate for 15 minutes.
To thicken the sauce, mix 2 tbsp. l. flour with 50 g of soft butter.
Gradually add the mixture to the skillet, stirring with a whisk so that the sauce remains homogeneous and without lumps. When serving, still warm ribs pour plenty of sauce and sprinkle with breadcrumbs (1 tbsp. L.). If desired, add 2-3 sprigs of parsley. The screamer is ready!
