For me there’s nothing better than a slow, peaceful, yet productive weekend in the countryside. Today, I’m gonna show you what our weekends usually look like—everything from house projects and making lemon cleaner to grocery runs, baking, cooking, and more.
Recipes:
*Nut Braid*
Yeast Dough
* 300 g (2 1/2 cups) flour
* 50 g (1/4 cup) sugar
* 15 g fresh yeast (or 2 1/4 teaspoons active dry yeast)
* 100 g (1/2 cup) milk (warm)
* 1 egg (large)
* 3 g (1/2 teaspoon) salt
* 45 g (3 tablespoons) cold butter, cut into small pieces
* Lemon zest (optional)
Hazelnut Filling
* 1 egg white (large)
* A pinch of salt
* 100 g (1/2 cup) sugar
* 1 tablespoon honey
* 150 g (1 1/2 cups) roasted hazelnuts, ground
* 50 g (1/3 cup) breadcrumbs
* 2 tablespoons mascarpone
* Cinnamon (optional)
* 1 tablespoon Amaretto
Glaze
* 70 g (1/2 cup) powdered sugar
* 2 tablespoons Amaretto (or lemon juice)
* 2-3 tablespoons water
*Saffron Risotto for Two*
Ingredients:
* 150 g (3/4 cup) Arborio rice
* 2 tablespoons dry white wine (optional)
* 1/4 teaspoon saffron threads
* 500 ml (2 cups) vegetable broth (keep warm)
* 1/2 small onion, finely chopped
* 1 tablespoon unsalted butter
* 1 tablespoon olive oil
* 80 g (1/3 cup) freshly grated Parmesan cheese
* Salt and pepper to taste
Vegetables:
1 leek
400 g (4 cups when sliced) mushrooms
Pepper
Paprika
1 tablespoon olive oil or butter
