- 2 boneless, skinless chicken breasts, bite-sized
Brine
1 liter water
- 2 tbsp salt
- 1 tsp sugar
- 1 tsp garlic powder
- 1 tsp paprika (optional)

- 2 tsp paprika (for colour and a mild smokey flavour)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper (adjust for spice level)
- 1 tsp white pepper (for a peppery kick)
- 1/2 tsp salt (use less if your sauce is salty)
- 1 tsp sugar (adds a touch of sweetness to balance the heat)
- 1/2 tsp ground coriander (for a citrusy, herbal note)
- 1/4 tsp ground ginger (adds a warm, aromatic kick)
- 1 tsp dried parsley or chives (for a fresh herbal element)
- 1/2 tsp Chinese five spice powder (optional, for depth of flavour)
Batter
