IF YOU CAN'T FIND FRESH UNSALTED ANARI CHEESE YOU CAN USE THE ITALIAN RICOTTA - VERY SIMILAR. THE ANARI I HAVE USED CAME IN PACKETS AND VERY HARD CHEESE, BUT STILL VERY TASTY!
INGREDIENTS - BOUREKIA "LITTLE PARCELS"
3 ½ glasses plain flour
½ glass vegetable oil
1 glass lukewarm water
1 tablespoon lemon juice
Pinch of salt
=For the filling=
500g Cypriot fresh unsalted Anari cheese or Ricotta
4 tablespoons caster sugar
3 - 4 tablespoons Rose water
1 teaspoon ground Cinnamon
Vegetable Oil for frying
Icing sugar for sprinkling
