Hi Everyone......
Still with the cake which is currently viral, today I tried making it again with cream cheese and chocolate ganache.
The chocolate ganache that I make with dark compound is too sweet for me and the texture is too liquid, even though I only use a little whip cream, I prefer the texture and taste of chocolate cream. To make the chocolate cream tastier, you can use couveture chocolate, but you have to add around 50g of sugar.
For cream cheese, I prefer cream cheese

Lava Cake part 2
Prepare the Pomegranate pudding mold
Grease with baking grease

Heat the steamer, wrap the lid with a napkin so that the water doesn't drip

Material A
4 egg yolks
3 eggs
120g granulated sugar

Material B
150g low protein flour
20g cornstarch
40g powdered milk
1/2 tsp salt
1 tsp double acting baking powder
Sift, set aside

Material C
65g instant coconut milk
50g liquid milk
50g butter
50g vegetable oil
- Cook all ingredients until the butter melts

How to make
- Mix ingredients A until fluffy for 10-15 minutes at high speed
- Add ingredient B while mixing at the lowest speed (standing mixer) or stir with a whisker
- Add ingredient C, stir well with a spatula
- Add powder or paste flavoring or coloring according to taste
- Pour into a 150g pomegranate pan (1 recipe makes 5 pans)
- You can add color/flavoring or cocoa powder according to taste
- Steam in a boiling steamer for 12 minutes
- Lift and remove from the pan, put it on a cooling rack

Cream cheese
200g cream cheese at room temperature
60g sweetened condensed milk
150ml whip cream 35% fat
- Mixer cream cheese and sweetened condensed milk until creamy
- Add 100ml whip cream, mixer until evenly mixed
- Gradually add the remaining whip cream, stir well with a spatula. Look for the right consistency so that the cream is not too runny but can still flow a little
- Insert the plastic triangle

Chocolate cream
75gr dark compound
200g fresh milk
7g corn flour
10g cocoa powder
1-2 tsp vanilla extract
15g butter
- Cook all the ingredients except the butter while continuing to stir until it explodes
- Cool by placing it in ice water while continuing to stir until cold
- Insert the plastic triangle
- Chocolate cream can be added with rum according to taste for maximum taste

Completion
- Prepare a cake box measuring 11x12 or according to taste
- Take 1 sponge, pour chocolate cream in the hollow center, then cover with cream cheese on top, add topping according to taste
- For topping you can use grated cheese, biscuits, chocolate, candy, etc

Notes:
Chocolate cream can be replaced with chocolate ganache, chocolate glaze, fruit paste, nutella or lotus which is heated briefly to make it liquid, etc.
