Cranberries are widely available this time of year, so I'm canning cranberry juice today. This is a very accessible recipe. I'll share water bath canning basics so even beginners can make this step by step canning recipe.
To can cranberry juice, fill each quart jar with:
1 1/2 C. fresh cranberries
1/4-1/2 C. sugar (I like 1/3 C.)
Hot water to .5" head space
Process in a water bath canner for 25 min.
Allow 6 months for infusion
