Dandelion Omelette Rice (serves 2)
[Ingredients]
・Rice...2 bowls
・Chicken thighs (cut into 1cm cubes)...120g
・Onion (minced)...1/2
・Mushrooms (thinly sliced)...4
・Green peas (frozen)...30g
・White wine...as needed
・Tomato ketchup...3 tablespoons
・Eggs...6
・Butter...5 and 1/2 tablespoons
・Salt, pepper...as needed
[How to make]
1. Put butter (2 tablespoons) in a frying pan, add the onion and fry over medium heat to bring out the sweetness. When the onion turns golden brown, add the chicken and fry.
Add the mushrooms and fry. Add 1.5 tablespoons of butter and fry. Add the white wine and fry briefly, then add the ketchup and fry.
Once the ketchup starts to bubble, turn off the heat, add the rice, salt and pepper and cook over high heat until evenly mixed to evaporate the water.
② Crack the eggs into a bowl and mix well with a whisk. Strain through a colander and add a little salt and pepper.
③ Add 1 tablespoon of butter to a frying pan and heat over high heat. Add half the eggs from ② and make an omelet while shaking the pan.
Tap the handle of the frying pan to shape the egg and make an omelet so that the inside is half-cooked.
④ Place half of ① on a plate, place ③ on top and top with green peas and it's done! !
When ready to eat, use a knife to make a vertical cut in the omelet and spread it out.
* Repeat steps ③ and ④ to make two servings.
