中秋節快到了,我們來做一些美麗又可口的冰皮月餅,和家人一起共度佳節!
The Mid-Autumn Festival is coming soon, let’s make some beautiful and delicious snowy mooncakes to celebrate the festival with our family!

以下食譜按 50克 月餅模用量計算

冰皮材料 (可分成17個約25克餅皮):
40克 糖
30克 澄麵粉
50克 糯米粉
50克 沾米粉
230克 牛奶
30克 甜煉乳
30克 油
5克 抹茶粉 (選修)

栗子餡料: (可分成17份約12-13克餡皮)
150克 烤栗子
15克 糖
30克 麥芽糖/葡萄糖/楓樹糖漿或蜂蜜糖
20克 油
(13克餡皮 + 12克熟栗子, 餡料共重不超過25克)

熟栗子: 17粒

建議: 同時準備/購買豆沙餡,以防有剩餘冰皮麵團,剩下來的豆沙餡可以冷凍保存

Below calculation is based on using 50g mooncake mold

Snowy dough Ingredients: : (can make 17 x approximately 25g crust )
40g sugar
30g wheat starch
50g glutinous rice flour
50g rice flour
230g milk
30g sweetened condensed milk
30g oil
5g matcha powder (optional)

chestnut paste filling: (can make 17 x approximately 12g-13g paste crust)
150g roasted chestnut
15g sugar
30g maltose/glucose/maple syrup or honey
20g oil
(13g paste crust + 12g cooked chestnuts, total filling weight should not exceed 25g)

Cooked chestnut: 17pcs

Suggestion:
Prepare/purchase red bean paste filling at the same time in case there is any leftover snowy dough. The remaining bean paste filling can be frozen and stored
