Homemade “jiffy” corn mix to make in bulk and use as needed.

We love Jiffy corn mix, but we also love to make things from scratch. We love knowing what we are putting in our food and making our own is the best way to do that.
"Jiffy" mix
4c. flour
3c. cornmeal
1c. sugar
6T. baking powder
2t. salt
this will fit perfectly in a half gallon mason jar. We make this and it lasts us about 4 months based on usage.
To make a pint mason jar do a half recipe.
1 box of Jiffy mix = 1 1/2c. of our homemade mix

To make corn muffins

Corn Muffins: Yield 6 - 8 muffins depending on size. 1 pkg. Jiffy corn muffin mix or 1.5 cups of mix you made in our recipe. 1 egg. 1/3 cup milk. Preheat oven to 400 degrees F. Grease muffin pan or use paper baking cups. Blend ingredients. Batter will be slightly lumpy. (for maximum crown on muffins let batter rest for 3 or 4 minutes, stir lightly before filling cups.) Fill muffin cups 2/3 full. Bake 15 - 20 minutes or until golden brown.
