Tripe soup ingredients:
Ingredients for 6-7 liters of tripe soup:
- 4 beef feet (cleaned hooves);
- 2-2.5 kg well-cleaned and unboiled tripe;
- 4 small onions;
- 1/2 celery root;
- 4 carrots for the soup;
- 4 bay leaves;
- 15 gr of salt, or to taste;
- 1 tablespoon of peppercorns;
- 1 small head and 1/2 of minced garlic;
- 2 smaller carrots for finishing at the end;
Grate them and sauté them with a little sunflower oil.
Sour cream dressing ingredients, the liaison:
- 3 egg yolks beaten with a little salt;
- 6-7 tablespoons of 9% vinegar;
- 500 g low-fat sour cream, max. 20% fat;
- 250 g yogurt, in this case I used Greek yogurt;
Alternatively, you can use only yogurt, clotted milk, kefir, buttermilk, etc.;
