The good and nice Gianni has created an unmissable place for lovers of pizza, or rather of Pinsa! Pinsa is the ancestor of pizza and even dates back to the period of Ancient Rome. In this case, in fact, the pizzeria is called Pinseria. Here I must say that the fresh and abundant ingredients give an exceptional dressing to the pinse of this famous Pinseria. The ingredients then vary with the changing of the seasons. The dough is obviously different from that of pizza, in fact it is composed of a mixture of wheat flour, soy and rice and then re-milled durum wheat semolina, extra virgin olive oil, salt, dry yeast. All flours are organic. The dough is also long leavening and highly hydrated. The name Pinsa comes from the Latin "Pinsere" which means to crush, pound, stretch and Pinsere is the name of this pizzeria, actually Pinseria!
