✍️ Ingredients (3 cubes of bread frame)
Mold Size: 9.5×9.5 cm
bread flour - 400g
Sugar - 35g
Salt. - 6g
Yeast (Gold) - 6g
Water - 130g
Milk - 130g
Unsalted Butter - 50g
Black Olive - 100g
(90g after removing the water with a kitchen towel)
Sliced Cheddar Cheese - 5 sheets (90g)
✍️ Recipe
1. Cut the black olives into small pieces and drain them on kitchen towels.
2. Add the rest of the ingredients except butter, black olives, and cheddar cheese and turn the kneader.
3. Complete the dough with elasticity and smoothness, then add black olives and mix at low speed.
4. Ferment at room temperature of 77 to 80℉ for 60 to 70 minutes.
⭐️In winter when the weather is cold, put a cup of warm water in the microwave and ferment it. On the contrary, when the room temperature is too hot, reduce the fermentation time by 5-10 minutes. (It ferments to the point where it does not shrink when you press the dough with your fingers.)
5.275~280g divided into three halves, bench time 15 minutes
6. During bench time, layer the sliced cheddar cheese and cut them into 1cm intervals.
7. Push the dough wide and add the cheddar cheese and mold the bread.
8. Second fermentation 50-60 minutes (77℉)
⚠️Apply milk to the bread before and after baking.
9. 374℉ preheated, 338℉ 27 minutes
10. Store at room temperature for 2-3 days, if stored for more than that, defrost or heat it at room temperature after freezing it. ^^
❓ Frequently asked questions❓
1. The oven I use is Wiswell Inhens. (WOP100 Navy color, ad X)
2. Can I also make it with an air fryer?
It's possible, but just as ovens have different performance from product to product, air fryers may have different set temperatures and times. I haven't cooked it myself with an air fryer, so I can't tell you the exact temperature and time, but you can lower the temperature by about 10 degrees and +- while looking at the baking color.
(However, for baking types, the surface may be hard or the oven spring may be weak due to hot air.)
3. What do you do when you bake it in a different mold?

You can increase the baking time by a few more minutes than regular milk bread.
4. I did the same fermentation time, but it doesn't inflate enough!
There are many problems with fermentation, but the most likely culprit is Yeast.
Did you use the right yeast
⚠️Red (mortgage) 0-5% and Gold (high sugar) 5-25% (sugar to flour ratio)
Please test the fermentation power to ensure that the storage method is not wrong.
❗️Please seal the yeast and keep it frozen.
5. Do I have to share red and gold for Yeast?
Up to 5 to 11% of flour (recipe like bread, morning bread) is similar to fermentation.
However, please use yeast for recipes with 0 to 5% sugar and 12% or more!
(The fermentation is significantly less effective)
