Today, I made chocolate ganache macarons by putting dark chocolate ganache between chocolate flavored coques.
When making French meringue, cold egg whites were used to complete the coques with a denser texture.
Delicious chocolate ganache macaron with thick ganache and chewy coques,

🔸 Storage
Seal the finished macaron well and keep refrigerated and consume within 4-5 days.
For long-term storage, please freezer. (about 2 weeks)

🔸 Coques
60g egg whites
60g sugar
76g almond powder
76g Powdered sugar
7g cocoa powder
🔸 Ganache
90g fresh cream
100g dark chocolate couverture
10 g unsalted butter
7g starch syrup
