Today, I prepared ^^ milk cream bread filled with savory and soft cream
As time goes by, the moisture of the cream spreads to the bread, so try making white cream bread with a more chewy and moist texture. :)
My family likes custard cream bread, but I think I'm going to like this bread more 💓 It's a bread that goes so fast!

The product used in today's video is "IN GOAT MILK & WHEY".

When I make bread compared to skim milk powder used a lot in baking, it definitely tastes more savory than milk :)

I've been looking hard to introduce goat milk powder to you, and it doesn't cause lactose intolerance because the lactose in goat milk is fast to digest and absorb and there is less residual lactose in the large intestine!

📍 Making simple goat milk
Hot water (60-70 degrees) 100ml + 3 spoons of powder

✍️ Ingredients (10 pieces)



▪️ Bread dough

Bread flour - 270g
Sugar - 30g
Salt - 5g
Yeast (Gold) - 5g
Milk powder - 15g 
Milk - 100g
Water - 85g
unsalted butter - 30g

📍It is a dough made by folding, so it is slightly moist. If you use hand kneading or kneading machine, reduce the water by about 5g.


▪️Milk cream

Milk - 390g
Milk powder - 40g
Salt - 1g
Sugar - 90g
Cake flour - 20g
CornStarch - 15g
unsalted butter - 25 g


✍️ Recipe

(Milk cream)
1. In a pot, mix the flour, cornstarch, sugar, salt, and powdered milk lightly, add milk, and mix well.
(Once you sift it, it mixes more evenly - optional)

2. Turn on the gas heat and continue to stir over medium heat.

3. When the cream thickens, turn off the heat and mix in butter.

4. Put the cream in a wide tray and cool it down in the freezer for about 30 minutes. (Keep it refrigerated after 30 minutes in the freezer)

(Bread dough)
5. Put the bread powder, sugar, salt, yeast, and powdered milk in a bowl and mix lightly.

6. Add milk, water (room temp) and melted butter and mix without clumping.

7. Fold 10 times after 20 minutes of room temperature rest

8. Fold 5 times after 20 minutes of room temperature rest

9. First fermentation 30 to 40 minutes
(30 minutes in summer, 40 minutes in winter)

10. Divide the dough into 10 pieces at a time of 51-53g, and bench time for 15 minutes.

11. During bench time, put milk cream in a piping bag.

12. Push the dough wide (approximately 11cm in diameter) and fill 50g each with cream.

13. Coat the dough surface with the powder and let it ferment for 30 minutes

14. Preheat the oven to 320℉ and bake in a 302 ℉ for 15 minutes.

15. When it's hot, shake off the powder right away.

16. If you eat it right away, the bread is soft, and the moisture from the cream spreads to the bread, making it chewy and moist!

17. If you store it at room temperature from the day of storage to the next day (excluding summer), keep it frozen from the beginning.





❓ Frequently asked questions❓

1. The oven I use is Wiswell Inhens. (WOP100)

2. Can I also make it with an air fryer?

It's possible, but just as ovens have different performance from product to product, air fryers may have different set temperatures and times. I haven't cooked it myself with an air fryer, so I can't tell you the exact temperature and time, but you can lower the temperature by about 10 degrees and +- while looking at the baking color.
(However, for baking types, the surface may be hard or the oven spring may be weak due to hot air.)

3. Can I use skim milk powder?

It's possible! However, skim milk powder is a product without milk fat, so it tastes a little lighter and fresher.

4. Without cornstarch?

Replace with the same amount of hard flour.
(Potato starch cannot be replaced)
