【Cinnamon sugar butter-fly】

◇ Ingredients ◇
~bread dough~
・200g All purpose flour
・18g sugar
・10g egg yolk
・40g milk
・78g water(5g of which is for the yeast solution)
・1.2g instant dried yeast
・3.5g salt

~Fillings~
・8g cinnamon
・40g unsalted butter
・40g granulated sugar (for filling)
・10g granulated sugar (for topping)


◇ Recipe Outline ◇
~The day before the day of baking the bread~
(1) )Making dough by overnight method
①Mixing
②Kneading
③Leave at room temperature for 30-45 minutes
④Degassing
⑤Refrigerated fermentation (8 to 12 hours)

~The day after~
①Dough division and bench rest
②Shaping
③Fermentation(28~30℃・50~60min)
④Preheating (220°C)
⑤Topping
⑥Baking at 200°C for 13 minutes
⑦Finish
