Original Undhiyu Recipe | Gujarati Undhiyu | South Gujarat Style Special Undhiyu Recipe
Undhiyu or Undhiyoo is a Traditional Gujarati Mixed Vegetable dish that is speciality of South Gujarat.
Traditionally its cooked upside down in earthen pots in underground.
Ingredients:
For Methi Muthiya:
1 Cup Fresh Fenugreek Leaves
2 tbsp Coriander
1 tbsp Green Garlic
1/2 Cup Coarse Gram Flour
2 tsp Coarse Wheat Flour
1 tsp Garlic Paste
1 tbsp Ginger Chilly Paste
1/4 tsp Turmeric Powder
1/2 tsp Carom Seeds
1 tsp White Sesame Seeds
1 tsp Sugar
1 tsp Lemon Juice
Salt to Taste
Water
Undhiyu Masala:
1/2 Cup Grated Fresh Coconut
2 tsbp Groundnut Powder
2 tbsp Carom Seeds
1 tbsp Sesame Seeds
1/4 tsp Turmeric Powder
1/4 tsp Asafoetida
2 tsp Garlic Paste
2 tbsp Ginger Chilly Paste
1 Cup Green Garlic
1 Cup Coriander
1/4 tsp Garam Masala
2 tbsp Sugar
1 tsp Lemon Juice
Salt
2 tsp Groundnut Oil
2 tbsp Coriander Cumin Powder
1 Potato
1 Sweet Potato
250 Grams Purple Yam
5 Brinjals
1/4 tsp Carom Seeds
1/4 tsp Asafoetida
3 Dry Red Chilly
250 Grams Surti Papadi
1 Banana
