Ingredients:
2 lbs chicken, breast or thighs
3 cups peaches, fresh or frozen
1 medium onion, chopped
1 lemon squeezed
2 Tbsp soy sauce
2 Tbsp brown sugar
salt & pepper to taste
2 Tbsp butter
1 Tbsp oil
Directions:
Cut chicken into 1 inch cubes. Salt and pepper chicken. Heat oil and butter in a large frying pan. In a separate bowl, place peaches and stir in brown sugar, coating well. Brown chicken in oil and butter until golden. Remove from oil and set aside. Saute onions until tender and translucent. Remove from pan and set aside with the chicken. Do not clean out the pan. Place peaches in the hot pan. Stir in soy sauce and lemon juice. Cook until peaches are tender and juices have thickened. Add chicken and onions to pan with peaches and heat through. Serve with rice or your favorite side dish.
