Recipe for fluffy pretzels with butter

NECESSARY PRODUCTS:

ABOUT THE DOUGH:

fresh milk - 200 ml. (warm)
water - 100 ml. (warm)
oil - 60 ml.
proteins - 2 pcs.
yolks - 1 pc.
May (dry) - 1 pc. (11 gr.)
sugar - 2 tbsp.
flour - 570 g (sifted)
salt - 1 tsp.
cow butter - 30 g (soft, at room temperature)

FOR SPREADING–

yolks - 2 pcs.
proteins - 1 pc.
cow butter - 30 g (soft, at room temperature)
sesame for sprinkling (black and white)

METHOD OF PREPARATION:

In a bowl, mix the milk, water, oil, eggs, sugar and yeast. Mix all the products and gradually add the flour. When dough begins to form, add salt and butter. Continue to knead for 3-4 minutes. If necessary, add a little flour. The dough should be very soft and slightly sticky. Leave the dough to rise for 1 hour.

Knead the slightly risen dough. Form 12 balls of the same size. Roll with a rolling pin into an elliptical shape. Grease with oil. Using a pizza knife, make longitudinal cuts, leaving one centimeter from the beginning and end. Wind on wicks diagonally. With the obtained wicks form a circle (like a pretzel). Arrange the pretzels in a baking tray. Cover with a clean towel and leave to rise for another 40 minutes.

Spread the pretzels with the beaten 2 egg yolks and one egg white. Sprinkle with sesame seeds. Bake in a preheated oven at 180 degrees for 25 minutes.
