काळ्या मसाल्यातील गोळी वाटण करण्यासाठी लागणारं साहित्य
• ५०० ग्रॅम उभे काप केलेले कांदे
• ५० ग्रॅम किसलेलं सुकं खोबरं
• ३~४ मोठे चमचे पंढरपुरी डाळं
• १० ग्रॅम धने
• १० ग्रॅम जिरं
• १ चमचा काळा मसाला
• १० काळी मिरी
• १० लवंगा
• १" ला थोडीशी कमी दालचिनी
• १ चक्रीफूल
• १ हिरवी वेलची
• १ काळी वेलची
• १०~१२ लसूण पाकळ्या
• २" आल्याचे तुकडे
• १~२ चमचे लाल तिखट
• १ मोठा चमचा तेल
• १ चमचा मीठ
• चवीनुसार मीठ

Today’s recipe is kalya masalayatil goli vatan. Once you prepare this and store it over a month!! I already have posted different vatan recipes. This is yet another delicious addition to the list. What is the difference then? We will make fresh kala masala and then vatan using that!! Isn’t it exciting? I am sharing exact proportions of all the ingredients. Please follow these to get that perfect taste and color. Try this recipe at home and write to me. You also can like, share and subscribe.

Ingredients:
• 500 gm sliced Onion
• 50 gm grated dry Coconut
• 3~4 tbsp roasted Chana dal
• 10 gm Coriander seeds
• 10 gm Cumin seeds
• 1 tsp Kala masala
• 10 black Peppercorns
• 10 Cloves
• 1” Cinnamon stick
• 1 Star anise
• 1 green Cardamom
• 1 black Cardamom
• 10~12 Garlic cloves
• 2” chopped ginger
• 1~2 tbsp Red chili powder
• 1 tbsp Oil
• 1 tsp Salt
• Salt to taste

Method:
• Heat up a pan on medium heat and add coriander seeds.
• You can use coriander powder in place of coriander seeds.
• Dry roast coriander seeds for about a minute add cumin seeds, black peppercorns, cloves, star
anise, cinnamon, black and green cardamom and roast it well together for about 2-3 minutes.
• You can use cumin powder in place of cumin seeds.
• When the spices are almost roasted, add dry coconut and roasted chana dal and roast it well
together until coconut get nice golden color.
• You can use 1 tsp rice or jawar or besan in place of roasted chana dal.
• Turn the gas off and let the mixture cool down completely.
• Heat up oil in a pan and add onion, salt garlic and ginger.
• Fry it well together until onion get reddish color.
• Turn the gas off and let it cool down.
• Blend the dry roasted ingredients into as fine powder as possible and transfer it into roasted
onion.
• Add kala masala, red chili powder and salt and mix everything well together.
• Transfer the mixture into a blender jar and blend it into fine paste. Avoid use of water while
blending.
• Take the mixture out into a bowl and goli vatan is ready.
• Store it in an airtight glass jar in freeze.
• It has shelf life of about a month in freeze.
• While making bhaji heat up oil and add this masala.
• Fry it for about 2-3 minutes and add the bhaji.
• You also can make non veg using this masala.
