साहित्य (२० जणांसाठी) |Ingredients
छोले शिजवण्यासाठी | To Cook Chole
• छोले किलो |Chole 1.5 kg
• बटाटा ६०० ग्राम | Boiled Potatoes 600 grams
• मीठ अडीच टीस्पून |Salt 2.5 tsp
• ओवा १/२ टीस्पून | Carom Seeds ½ tsp
ग्रेव्हीसाठी |For gravy
• टोमॅटो १०-११ (८०० - ९०० ग्राम ) | Tomato 10-12 (800 - 900 gms)
• कांदे ८-९ (६०० ग्राम ) | Onions 8-9 (600 gms)
• लसूण पाकळ्या १५-२० | Garlic cloves 15-20
• आले २-३ इंच | Ginger 2-3 inches
• हिरव्या मिरच्या ९ - १० | Green chilies 9-10
मसाला पेस्ट करण्यासाठी |To make powder masala paste
• धने पूड ६ टीस्पून (२०ग्राम) | Coriander pw 6 tsp (20 gms)
• काश्मिरी मिरची पावडर ४ टीस्पून (२०ग्राम) |Kashmiri chilly pw 4 tsp (20 gms)
• साधी मिरची पावडर २ टीस्पून (१० ग्राम)|Red chily pw 2 tsp (10 gms)
• चाट मसाला दीड टीस्पून (१० ग्राम) |Chat Masala 1.5 tsp (10 gms)
• किचन किंग मसाला ६ टीस्पून (२५-३० ग्राम) |Kitchen King Masala 6 tsp (25-30 gms)
• छोले मसाला ६ टीस्पून (२५-३०ग्राम) | Chole Masala 6 tsp (25-30 gms)
• मीठ ३ टीस्पून (२५ ग्राम ) |Salt 3 tsp (25 gms)
• कसुरी मेथी २ टेबलस्पून | Kasuri Methi 2 tbsp
• हिंग १ टीस्पून | Hing 1 tsp
• पाणी दीड कप | Water 1.5 cup
फोडणीसाठी खडे मसाले |Whole spices for main tadaka
• जिरे २ टीस्पून |Cumin 2 tsp
• मसाला वेलदोडा ३-४ | Black Cardamom 3-4
• लवंग ६-७ | Cloves 6-7
• काली मिरी ६-७ | Black pepper pw 6-7
• दालचिनी २ | Cinnamon 2
• तमालपत्र ५-६ | Bay leaves 5-6
• तेल १५० ग्राम | Oil 150 gms
जास्तीच्या तडक्यासाठी |For Extra tadaka
• साजूक तूप ४ टेबलस्पून | Ghee 4 tbsp
• आले पातळ कापून २ इंच | Ginger juilans 2 inch
• उभय चिरलेल्या हिरव्या मिरच्या १०-१२ | Slit green chilies 10-12
• गोल चिरलेला कांदा २ मध्यम | Onions rings of 2 med onions
• गोल चिरलेला टोमटो २ मध्यम | Tomato rings of 2 med tomatoes
• चिरलेली कोथिंबीर | Chopped fresh coriander
Step By Step process of chole masala recipe | how to make chole masala gravy step by step -
Preparations -
Step 1 chole soaking -
• Wash the chole well, add water and soak them for 10-12 hrs or overnight, you can add ¼ tsp baking soda to cook chole soft. (adding baking soda is totally optional)
Step 2 To cook chole
• next day wash the soaked chole well, take them into a pressure cooker
• to the chole add salt, carom seeds, water 1 inch length above chole and take 5-6 whistles
• 2 whistles on high flame and 3 on low flame.
Step 3 Making Gravy & Tomato puree
• Give 2 plus sign cuts to the tomatoes, take tomatoes in a saucepan add water, and boil tomatoes for 10-12 mins or until tomato release its skin
• To make onion paste, into a grinding jar take onions, ginger, garlic & green chilies and make a paste using some water.
• Once tomatoes come at room temp, peel off the tomato skin and grind the tomatoes to make puree.
Step 4 Make powder spices paste
• In a mixing bowl take all the powder spices, kasuri methi, salt & mix well addwater and mix well
Step 5 Preparations for Main Tadaka
• For the main tadaka we need whole spices, take them into a plate.
• Take 2 cups chole from cooked chole and mash them well and keep it aside.
Step 6 Preparations for extra tadaka
• Make ginger julians, cut onions into rings, tomato into round slices & slit green chilies.
Step 7 Making chole masala-
• heat up oil, add cumin seeds & whole spices & saute them for a few seconds
• add onion garlic paste & saute it for 7-8 mins
• remove the big whole spices and add ready masala paste & 1 cup of water and saute for 3-4 mins
• add tomato puree & saute for 7-8 mins
• add mashed chole, some water & saute for 4-5 mins & turn off the flame
• Take the cooked chole into a large vessel & pour this gravy to the cooked chole
• add hot water to adjust consistency and mix well, turn on the gas flame and bring it to boil
• Once it starts to boil, turn the gas flame to low and cook the chole for 5-6 mins
• Meanwhile Into a pan heat up the ghee, to this add ginger julians, onions rings, tomato slices & slit green chilies
• saute them on high flame for 4- 5 mins, dont cook them until they get soft
• cook on high flame for 4-5 mins
• once done, pour this tadaka on the boiling chole masala
• mix well and immediately cover the lid and cook for a min
