The title may say a working man's meal, but it is such a delicious meal to put together for your family. You can put these together the night before or the morning of and bake when you're ready for dinner. You can also freeze them, just thaw and bake. I hope you will give these a try. Ingredients I used:
chicken thighs
squash
zucchini
onions
green onions
sweet peppers
salt & pepper
italian seasoning
butter
Directions:
Assemble ingredients together on a sheet of foil. Season to your taste. For the chicken thighs, I baked them for 45 minutes. Test with a thermometer. Chicken must be no less than 165 degrees for doneness. I usually go over to 185, that's just my preference.
