Make liver sausage yourself!
The most popular types of sausage among the Hong Kong Chinese are the traditional sausage and liver sausage.

And today I will introduce you to the delicious liver sausage ...
Ingredients and spices:
- 1000 g duck liver
- 750 g lean pork
- 750 g pork fat
- 50 g sea salt
- 150 g brown sugar
- 1 tsp pepper
- 60 ml light soy sauce
- 100 ml Mei Kuei Lu ( rose schnapps )
- 80-100 g ginger = (about 50 ml ginger juice)
- Sheep string (20/22)
P.S .: At Schafsaitling I bought a pack for 18m, there was 1/4 left.
If duck liver does not find what you are looking for, chicken liver can be substituted.
