👉INGREDIENTS:
For a 24 x 24 cm pan:
85 g buckwheat flour
225 g corn starch
40 g tapioca or potato starch
6 g psyllium husk
4 g dried yeast
4 g salt
70 g sugar
110 g egg
165 g milk
50 g butter
9 g xanthan gum
For the filling
100 g sugar
1 tbsp cinnamon
50 g butter
For the glaze:
100 g icing sugar
1 tablespoon butter
1-2 tablespoons water
👉POSSIBLE SUBSTITUTIONS:
✔️La buckwheat flour, for any gluten-free cereal or pseudocereal flour: sorghum, rice, teff, gluten-free oats.... In this case, add an extra 20 g of milk or vegetable drink.

✔️El egg for the same amount of aquafaba.
✔️El sugar: if you cannot consume sugar, use your usual sweetener according to the manufacturer's equivalents.
