對蔥的喜好開始鬆動已經是長大後的事了。我的蔥齡不長,但這不影響蔥麵包施展魔法的功力,我馬上就愛上蔥麵包了。胖嘟嘟的蔥麵包排排站好可愛,等放涼就可以撕開來大口吃,沒吃完的丟冷凍慢慢吃,蒸一蒸就跟新出爐的一樣好吃了!滿滿的蔥花餡,大口吃超滿足!

My appreciation for scallions only started to grow after I got older. My "scallion age" isn’t very long, but that doesn’t diminish the magical allure of scallion bread—I fell in love with it immediately. With a filling packed full of scallions, every big bite is incredibly satisfying!

食材 Ingredients▼

○麵團 Dough
.
高筋麵粉 300 g
bread flour, 300 g

水 185 g
water. 185 g

鮮奶油 30 g
whipping cream, 30 g

無鹽奶油 25 g
unsalted butter, 25 g

砂糖 20 g
sugar, 20 g

酵母 4 g
instant yeast, 4 g

鹽 1/2 小匙
salt, 1/2 tsp

○蔥餡 Scallion Filling
.
蔥花 10 支
scallion, 10

橄欖油 1 大匙
olive oil, 1 Tbsp

鹽1/2 小匙,
salt, 1/2 tsp

雞蛋 1 顆
egg, 1

步驟 Instructions▼

●Making the Dough
1. In a mixing bowl, add water, heavy cream, sugar, instant yeast, flour and salt.
2. Mix all ingredients on low speed for about 3 min to combine.
3. Cover with a damp cloth and let the dough rest for 30 min.

◆ 30 min. later◆
4. Continue kneading on medium speed for about 5 min.
5. Add softened butter.
6. Mix on low speed for another 3 min to incorporate the butter.
7. Flip and stir the dough.
8. Continue kneading on medium for 8 min.
9. Knead until the dough stretches thin like a windowpane without breaking.
10. Shape the dough into a ball and transfer it to an oiled mixing bowl.
11. Cover with a damp cloth and let the dough proof in a warm place for about 40 min.

●Making the Filling
12. Chop 2 bunches of scallions.
13. Add salt, oil, and an egg.
14. Mix well.

◆ 40 min. later◆
15. The dough has doubled in size.
16. Punch the dough to release air.
17. Transfer the dough to a baking mat.
18. Press the dough down, fold it inward, and shape it into a ball.
19. Divide the dough into 8 equal pieces.
20. Shape each piece into a ball.
21. Work with one piece of dough at a time.
22. First, gently press it flat, then roll it out into a long oval shape.
23. Roll the dough from the top edge downwards.
24. Pinch the seam to seal.
25. Place on the baking sheet lined with baking paper.
26. Use scissors to cut halfway through the center of the dough.
27. Cover and let the dough rise for 40 min.

●Preheating the Oven to 400℉/200℃
28. Beat an egg.
29. Brush eggwash over the surface of the dough.
30. Place the filling in the middle of the dough.
31. Transfer to the preheated oven.
32. Bake at 400℉/ 200℃ for 20 min.
