芝麻蔥燒餅的迷人之處就在這裡,看起來平凡無奇,但吃起來每一口都是鄉愁。剛入口有焙香芝麻引進門,隨著剛剛好的鹽味咀嚼出青蔥香,最後讓白胡椒在嘴裡留下一條尾韻。對從小熱愛蔥油餅的我來說,蔥花澱粉全家族都是我的心頭好(東北大餅也是每次吃每次心臟都會被重擊!)他們就是知道怎麼攻略我心中最軟的一塊!

The charm of sesame scallion pancakes lies right here. They look plain at first glance, but each bite brings a taste of nostalgia. The toasted sesame greets you first, and then a perfect touch of salt highlights the fresh scallion flavor as you chew, with a hint of white pepper lingering at the end.

○麵團 Dough
中筋麵粉 300 g
all-purpose flour, 300 g
水 175 g
water, 175 g
植物油 1 大匙
vegetable oil, 1 Tbsp
鹽 3 g
salt, 3 g
糖 25 g
sugar, 25 g
速發酵母 3 g
instant yeast, 3 g
○內餡 Filling
蔥 150 g
scallion, 150 g
植物油 30 g
vegetable oil, 30 g
糖 1 小匙
sugar, 1 tsp
鹽 1/2 小匙
salt, 1/2 tsp
白胡椒粉 1/2 小匙
ground white pepper, 1/2 tsp
○灑料 Topping
白芝麻 適量
white sesame, 1 Tbsp
糖 15 g
sugar, 15 g
水 15 g
water, 15 g

●Making the Dough
1. In a mixing bowl, add water, oil, sugar, flour, yeast and salt.
2. Mix all ingredients on low speed for about 3 min initially.
3. Continue kneading on medium speed for about 5 min.
4. Shape the dough into a ball.
5. Coat the mixing bowl and dough with vegetable oil.
6. Cover and let the dough rise for 30 min.

●Making the Filling
7. Chop 2 bunch of scallions.
8. Add salt, sugar, oil, and ground white pepper.

●Making the Syrup
9. In a small bowl, combine sugar and water.
10. Mix well.

11. Place the dough on the baking mat.
12. Roll out the dough to a 45 x 27 cm rectangle.
13. Place 2/3 of the filling on the lower third of the dough.
14. Evenly spread out the filling.
15. Fold the bottom third of the dough over to wrap the filling.
16. Add and spread out the rest of the filling on the dough.
17. Fold the dough from the top to wrap the filling.
18. Brush the syrup over the surface of the dough.
19. Sprinkle sesame seeds over the surface of the dough.
20. Divide into 8 portions.
21. Transfer small pieces to the baking sheet lined with baking paper.
22. Place in the oven. Turn on the light and place a cup of hot water next to the dough.

●Preheating the Oven to 400℉/200℃
23. Transfer to the preheated oven.
24. Bake at 400℉/200℃ for 15 min.
