原本覺得打上蝴蝶結之後真的太漂亮了,有點捨不得吃。但,實在太香。趕緊先把蝴蝶結拆了,接下來一切好辦…最難的是停下來!可能我肉桂粉真的加很多,那個香味一直延續到晚上,讓我心神不寧。

○麵團 Dough
中筋麵粉 300 g
all-purpose flour, 300 g
優格 150 g
plain yogurt, 150 g
蛋 1 顆
egg, 1
無鹽奶油 55 g
unsalted butter, 55 g
糖 10 g
sugar, 10 g
酵母 4 g
instant yeast, 4 g
鹽 1/2 小匙
salt, 1/2 tsp
○內餡 Filling
黑糖 70 g
brown sugar, 70 g
肉桂粉 7 g
ground cinnamon, 7 g
無鹽奶油 40 g
unsalted butter, 40 g

●Making the Dough
1. In a mixing bowl, add yogurt, egg, sugar, yeast, flour and salt.
2. Mix all ingredients on low speed for about 3 min initially.
3. Cover with a damp cloth and let the dough rest for 15 min.

4. Continue kneading on medium speed for about 5 min.
5. Add softened butter.
6. Mix on low speed for another 3 min to incorporate the butter.
7. Flip and stir the dough.
8. Continue kneading on medium for 8 min.
9. Knead until the dough can be stretched thin without tearing, forming a windowpane.
10. Shape the dough into a ball.
11. Lightly grease both the mixing bowl and the dough with vegetable oil.
12. Cover with a damp cloth and let the dough proof in a warm place for about 60 min.

●Making the Filling
13. In a small bowl, add brown sugar and ground cinnamon.
14. Mix well until combined.
15. Add the softened butter.
16. Mix well.

17. The dough has doubled in size.
18. Transfer the dough to a baking mat.
19. Deflate the dough by pressing it down, fold it inward, and shape it into a ball.
20. Divide the dough into 4 equal pieces.
21. Shape each piece into a ball.
22. Work with one piece of dough at a time.
23. Gently press it flat, then roll it out into a rectangle.
24. Place the cinnamon filling on the dough.
25. Spread the filling evenly, leaving 1 cm on one side without spreading.
26. Roll the dough from the opposite side toward the side without filling.
27. Pinch the seam to seal.
28. Roll the log back and forth to elongate it further.
29. Leave 2 cm at the top, and cut the dough in the middle to create 2 stripes.
30. Keep the cut sides facing up and twist the two strips into a braid.
31. Keep the cut sides facing up, and pinch the ends of the braid together.
32. Place on the baking sheet lined with baking paper.
33. Repeat the same steps for the remaining dough to make 4 wreaths.
34. Let the dough rise for 30 min.

●Preheating the Oven to 350℉/180℃
35. Brush the surface of the dough with egg wash.
36. Transfer to the preheated oven.
37. Bake at 350℉/ 180℃ for 25 min.
