🍳 Full Recipe: The Ultimate Carnivore Bagels
Ingredients:

1 cup (8 oz) cottage cheese, blended smooth
1 ½ cups (6 oz) shredded mozzarella cheese
2 tbsp cream cheese, softened
3 large eggs, separated
2 tbsp beef gelatin powder
2 tbsp finely ground Porq Panko (or any pork panko)
½ tsp Redmond Real Salt or sea salt
Optional: crispy, golden bacon bits baked into the surface

Instructions:

Preheat Oven: Set your oven to 350°F (175°C). Grease a silicone bagel mold or line a baking sheet with parchment paper.
Blend Cottage Cheese: In a blender or food processor, blend the cottage cheese until smooth.
Prepare Dry Ingredients: Mix beef gelatin, pork panko, and salt in a small bowl.
Melt Cheeses: Combine shredded mozzarella and cream cheese in a microwave-safe bowl. Microwave in 20-30 second intervals, stirring until fully melted and smooth.
Mix Wet Ingredients: Whisk egg yolks and blended cottage cheese in a large bowl. Stir in melted cheeses until fully combined.
Combine Dry and Wet: Add the dry ingredients to the wet mixture and stir until a sticky batter forms.
Whip Egg Whites: Whip egg whites in a clean bowl until stiff peaks form. Gently fold them into the batter in two batches.
Spoon Batter: Spoon the batter into the bagel molds or shape circles on the lined baking sheet. Smooth the tops with a spoon.
