We've been in a breakfast rut: eating the same things over and over, and eating convenience foods that aren't really healthy. Join me for a morning of stocking our fridge and freezer with tasty breakfasts made from clean ingredients. We'll make a breakfast casserole (with my secret ingredient!), freezer waffles, delicious homemade granola, and gluten free pumpkin muffins.
Breakfast Casserole Ingredients:
12 eggs
1 lb. cooked protein (I used 12 oz. bacon bits)
1 C. creme fraiche/sour cream
1/4 C. milk
1 tsp. salt
1 bell pepper, chopped and cooked
1 onion, chopped and cooked
2 C. shredded cheese
Bake at 350F for about 40 min.
Freezer Waffles:

Flash-freeze in a single layer for 1 hr. Then pack in freezer bags with parchment paper between layers.
Granola Recipe: (I recommend 1/2 tsp. salt and 1 C. dried fruit)
