Chee Cheong fun, cheong fun or rolls of rice noodles, also known as steamed rice rolls are Cantonese dishes from HongKong and south China. They are usually served as snacks, side dishes or as a kind of dim sum. It is a thin plate of rice noodles, filled with shrimps, pork and vegetables or other ingredients. Soy sauce is poured over a serving dish. When made with no fillings, it’s eaten with dark soy sauce,
a drizzle of sesame oil and sesame seeds. Also called jyu cheung fun in Hakka.
INGREDIENTS for the Recipe
110g rice flour
40g tapioca flour
10 g wheat starch
400 ml water
1/2 tsp salt
1 tsp oil
1 tbsp dried shrimps ( soak for 20 mins, minced )
Chopped scallions or spring onions
Sauce Ingredients
2 tsp premium light soy sauce
1 tsp sesame oil
1 tbsp sugar
1/2 tsp mushroom granules ( optional but flavorful )
35 ml water
Mix all sauce ingredients together.
Steam for one minute or till you see bubble up.
Let cool down a bit before scraping into a roll.
