We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.

▼RECIPE

【Ingredients】 for 4 persons
1 bunch of moroheiya (jute marrow)
4 chicken wings
1/2 clove garlic
1/4 onion
600ml water

1 tablespoon unsalted butter
1 tablespoon olive oil

Salt and pepper

[Cumin butter sauce]
1 tablespoon softened unsalted butter
1 tablespoon olive oil
1 teaspoon cumin seeds

【Preparation】
・ Chop the moroheiya
・ Season the chicken wings with salt and pepper.
・ Chop the garlic and onion.
・ In a small bowl, combine the ingredients for the cumin butter sauce.

【Procedure】
1. Heat the olive oil in a fry pan, brown the chicken wings.

2. Add the onion and garlic and sauté.

3. Add the butter and the moroheiya and sauté quickly. Add water and reduce heat to a simmer. Season with salt and pepper.

4. Pour the soup into bowls. Garnish with a dollop of cumin butter sauce.
