・Honey 10g
・1 egg (room temperature)
・35g granulated sugar
・50g cake flour
・Baking powder 1.5g
・Earl Gray (1 tea bag) 3g
① Apply a thin layer of butter to the mold and sprinkle with strong flour.
2) Dust off the excess powder and put it in the refrigerator.
③ Put honey, eggs and granulated sugar in a bowl and mix well with a whipper.
④ Sift the cake flour and baking powder together and mix from the center with a whipper.
⑤ Divide the melted butter into 3 portions and mix each time.
⑥ Add Earl Gray tea leaves and mix
⑦ Wrap tightly and let it rest in the refrigerator for 1 hour
⑧ Mix lightly and pour into the mold of ② (it is easier to do with a piping bag)
⑨ Bake in an oven preheated to 190℃ for 10 minutes
⑩Remove from the mold and let it cool (If you want to coat it with chocolate, let it cool overnight if possible)

・White chocolate for coating 100g
・Chocolate pigment (blue, red) Appropriate amount
① Divide the chocolate into 1:1:2 ratio and melt in a hot water bath.

③ Pour into a washed and dried mold and add the madeleine before it hardens.
④ Cool in the freezer for 20 minutes

・Cream cheese (room temperature) 70g
・25g granulated sugar
・Fresh cream (around 45%) 70g
・Appropriate amount of food coloring (rose)
① Whisk fresh cream while cooling (soften)
② Knead the cream cheese well.
③ Add sugar to ② and mix well
④Add a small amount of cream from ① to ③ and mix.
⑤Mix all together
⑥ If you want to color, add food coloring and mix
