Taiwan Maze Soba(for 1 serving)
1 serving thick noodles
2 tbsp Shoyu Dare
1 tbsp Negi Abura
some ground sesame seeds
some Chinese chives
some Kizami Nori
some Kujo Negi
some Taiwanese-style minced meat
some bonito powder
some minced garlic
some kombu vinegar

Taiwanese-style minced meat(for 4 servings)
40 g (1.3 oz) minced garlic
40 ml (1.3 oz) Negi Abura
280 g (9.3 oz) ground pork
2 pieces Takanotsume
1 tbsp soy sauce
1 tbsp Shaoxing wine
1 tsp Doubanjiang

Shoyu Dare(for 4 servings)
60 ml (2 oz) mirin
30 ml (1 oz) sake
60 ml (2 oz) soy sauce
1 piece kombu

Negi Abura(for 4 servings)
some green part scallion
100 ml (3.3 oz) salad oil
20 ml (0.7 oz) sesame oil

Kombu vinegar
1 piece kombu
some vinegar

 ネギ油:大さじ1
 摺りごま:適量
 ニラ:適量
 海苔:適量
 九条ネギ:適量
 台湾ミンチ:適量
 カツオの削り粉:適量
 ニンニク微塵切り:適量
 昆布酢:お好みで

台湾ミンチ(4人分)
 ニンニク微塵切り:40g
 ネギ油:40㏄
 豚ひき肉:280g
 鷹の爪:2本
 醤油:大さじ1
 紹興酒:大さじ1
 豆板醤:小さじ1

醤油だれ(4人分)
 みりん:60㏄
 酒:30㏄
 醤油:60㏄
 昆布:1切れ

ネギ油(4人分)
 ネギの青い部分:1本分
 サラダ油:100㏄
 ごま油:20㏄

昆布酢
 昆布:一切れ
 酢:適量
