강력쌀가루와 타피오카 전분을 사용해서 쫀득한 식감을 살렸는데요
타피오카전분은 밀가루대용 글루텐프리가루로도 많이 쓰이며 식물의 뿌리에서 추출한 전분입니다
베이킹에서 많이 사용되는 파인소프트는 이 타피오카전분을 가공한 변성전분입니다
저는 타피오카전분을 사용하였고 수분을 잘 흡수하고 유지하는 강력쌀가루로 촉촉함을 유지시키고 물엿과 우유 오일을 첨가해 최대한 부드럽고 쫄깃함이 오래가도록 만들었습니다
강력쌀가루의 장점은 쫄깃하고 촉촉함이 오래가며 우유로 반죽하면 아주 부드러워진답니다 1차발효가 없어 시간도 절약되고 맛있어서 자주 사용한답니다
크림치즈빵을 낮에 굽고 식힌 후 먹으니 부드럽고 쫄깃한맛이 아주 좋았습니다
냉장고 보관후 밤에도 먹어봤는데 딱딱해지지않았고
더 쫀득하고 맛있었답니다 ♡
