Bamboo Fiber Experiment on my Keto Buttermilk Biscuit Recipe

Been wanting to revisit this recipe for awhile. Found out that I had a pretty delicious biscuit recipe to begin with even if the oat fiber was giving me problems, like every other keto ingredient that isn't the same across all brands. So the conclusion of this experiment is you can swap bamboo fiber out for the oat fiber and you may need different amounts of liquid depending on ingredient and the brands. But I had a really good recipe to begin with and shouldn't have changed anything else in the experiment.

Keto Buttermilk Biscuit- revised
1/4 Cup+1 1/2 Tbs. Coconut Flour (40-44 g Coconut flours are all different)
80 g Unflavored Whey Protein Isolate (approximately 1 Cup packed)
2 tsp. Xanthan Gum
2 tsp. Erythritol (can leave out for more savory biscuits or add more for sweeter biscuits) If using allulose (2 Tbs.) reduce oven temp. to 375 and bake for 13-15 minutes
2-1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
24g/4-5 Tbs. Oat Fiber or Bamboo Fiber
1/2 tsp. Salt (1 tsp. if using unsalted butter)
8 Tbs. Butter (cubed or grated and cold)
2-4 oz./1/4 Cup- 1/2 Cup Alternative Low Carb Milk or Heavy Cream (Don't add to egg and cream cheese mixture)
1 tsp. Apple Cider Vinegar (can use white distilled)
2 Egg (room temp is best)
4 Oz. Cream Cheese (softened)

310 Calories
25 g Fat
10g Total Carbs
7 g Fiber
3 g Net Carbs
17g Protein

Macros for one of 8 biscuits:

230 Calories
19 g Fat
7g Total Carbs
5 g Fiber
2 g Net Carbs
13 g Protein
