This classic cold pork jelly is not only incredibly tasty but also very healthy, thanks to its high collagen content. It’s perfect for any season and easy to prepare, as long as you have a little patience.

Ingredients:
2 pork trotters
1 pork ear
2 tablespoons salt
1.5 liters of water
3 bay leaves
10 black peppercorns
2 garlic cloves
Preparation:
Preparing the Meat
Thoroughly clean the pork trotters and ear. If necessary, scorch them lightly and then wash them well with a brush under running water.

Cooking
Place the trotters and ear in a large pot and cover them with 1.5 liters of cold water. Add 2 tablespoons of salt and cook over low heat, skimming off the foam that forms on the surface from time to time.

Adding the Spices
Once the foam stops forming, add the 3 bay leaves, 10 black peppercorns, and 2 garlic cloves. Let everything simmer over low heat until the meat becomes so tender it starts falling apart.

Deboning
Remove the meat from the broth. Debone the trotters, and cut the pork ear into thin strips.

Straining and Assembling
Strain the broth through a fine sieve and pour it over the arranged meat in a glass container.

Cooling
Refrigerate the dish for at least 12 hours until the jelly sets completely.

Serving:
Serve the pork jelly cold, cut into pieces, with additional crushed garlic for enhanced flavor.
